Harvest takes place middle of September and is picked by hand.
Winemaking, is carried out using a brief maceration whereas the skins are kept with the must that will help the colour and elements for the wines personality, Follwwing this the wine is left for around 10 hours at a temperature of around fifteen degrees.
Soon after a soft press is carried out and the must is cooled to around ten degrees and then preserved in steel tanks for around four months, The wine is then decanted and stored for a further 4 months at twelve degrees to keep the flavour and freshness ready for bottling.
